Warming Ginger Soda

A delicious old-fashioned drink, perfect to sip on in the summer evenings


Ingredients
•300 (11oz) unpeeled fresh root ginger
•225 (8oz) caster sugar
•6 cloves
•1½ lemons
•1 (1¾ pint) soda water


Method
1 Finely slice 300g (11oz) unpeeled fresh root ginger. Put into a pan with 225g (8oz) caster sugar, 6 whole cloves and zest and juice of 1½ lemons. Add about 600ml (1pint) cold water to cover. Heat gently to dissolve sugar, then turn up heat and simmer for 10min. Strain through a fine sieve into a jug. Allow to cool for 10min, then top up with 1 litre (1¾ pint) soda water. Garnish with fresh mint leaves.
