Broccoli and Stilton
1 head of broccoli (broken into florets)
I large onion ( chopped)
1 large potato ( cut in chunks)
2pints vegetable stock
4-6 oz blue Stilton ( cubed) ( is also good with Blacksticks blue)
tablespoon olive oil
Saute the onion few minutes in the olive oil, add the potatoes, broccoli and then vegetable stock. Stir in the cheese. Simmer for 20 mins. Cool and liquidise. Serve with chunks of crusty bread
